Soul Food Sunday! Not Your Mama’s Average Collard Greens Recipe Drea’s Healthy Collard Greens Recipe 1 large bunch collard greens, about 1 1/2 pounds, stemmed and washed in 2 changes of water/Glory’s Cut Collard Green located in the Produce Area Salt to taste
2 tablespoons extra virgin olive oil 1 onion, sliced very thin across the grain (Optional) 1/4 to 1/2 teaspoon crushed red pepper flakes/Jalapeno pepper cut finely/Hot Sauce (optional) Bring a large pot of water to a boil. Add collard greens, onion, salt, olive oil, and red pepper to pot. Cook until greens are tender, about an hour/hour and half. minutes.  Serves :4; Calories: 122; Total Fat: 7 grams; Saturated Fat: 2 grams; Protein: 4 grams; Total carbohydrates: 14 grams; Sugar: 5 grams; Fiber: 5 grams; Cholesterol: 8 milligrams; Sodium: 859 milligrams  Enjoy your collar greens without the fat backs and bacon drippings.
